Italian Vegetarian Cooking
The original Mediterranean diet with its healthy proportion of proteins, vitamins, sugar and fats is still every much the standard in Italy
with its emphasis on pasta, vegetables and fruit. The Italian diet is for most part vegetarian; vegetarianism however is not as
widespread: Italians tend to be a view as an additive and not as the main event. This course focuses on the different aspects of
regional food in Italy, in relation to the typical vegetarian dishes of each region. The aim of the course is to practice traditional recipes
on a range of regions of Italy: the selection of dishes reflects what is really popular and traditional in Italy on the Italian vegetarian
cuisine (fresh pasta, risotto, polenta, minestrone etc.) that the students can reproduce at home.
