PROFESSIONAL CULINARY ARTS PROGRAM

The Apicius Professional Program offers students the possibility of enrolling for a single semester or completing a full year certificate. Students wishing to enroll in the intermediate and advanced programs should send a detailed CV (resume) along with their enrollment form. The school reserves the right to accept students into the advanced program only upon their arrival in Florence and after they have successfully completed their practical/theory entrance exam. The certificate programs (2 semesters long) provide students with the basic skills necessary for pursuing a career in the food industry.

The Professional Culinary Arts Program develops a student's aptitudes to their optimum potential and prepares them for a professional career.

Italian cuisine has recently seen its reputation spread because of its simplicity and its healthy ingredients. Our food legacy has always been part of our culture; it is intimately linked to our literature, art and lifestyle. Unlike French cuisine, based on technique, Italian cuisine is simple and based more on the quality of ingredients than on technical skills. Students attending our certificate program in Culinary Arts therefore, should not expect strictly technical lessons, but rather a thorough understanding of our regional culture, our food history, our recipes and ingredients. Italian chefs are NOT trained to entertain guests with acrobatic slicing, but offer a deep understanding and practice of our regional culture.

Culinary Arts students should be aware that they will be responsible for their own Chef's Knives. The list of required Knives will be included with acceptance materials.

In order to keep class sizes small the number of enrollments is limited. Admissions will close once available spaces are filled.
